Wilbur Scoville Short Bio
Wilbur L. Scoville (1865-1942) was an American chemist and pharmacologist, especially known for the Scoville scale of organoleptic recognition. He developed the scale based on tests, while working in the pharmaceutical Parke-Davis to determine how hot it was a pepper or chili pepper.
In 1922, Scoville won the Ebert Award from the American Pharmaceutical Association and in 1929 he received the Remington Medal of Honor. Scoville also received a Ph.D. from Columbia University.
Scoville wrote The Art of Compounding, which was first published in 1895 and was edited eight times. The book was used as a pharmacological reference until the 1960s. Scoville also wrote Extract and Perfumes, with hundreds of perfume and essence formulas.
Wilbur Scoville developed in 1912 a scale of spicy. He carried out the first tests in the well-known pharmaceutical Parke, in which at that time he worked, and devised, based on them, a protocol to measure the degree of itching of each food. The result was the Scoville Organoleptic Examination, which warns, through the so-called Scoville units, how much the chili peppers, the chilies, the cayenne and even the peppers sting.
