Carme Ruscalleda Serra (Sant Pol de Mar – El Maresme, 1952) is a Spanish cook.

Carme Ruscalleda’s Biography

From a farmer farming family, she studied charcuterie, in addition to merchant trade, and joined the family business (a charcuterie) with her husband. He immediately incorporated a section of homemade dishes to take away. She bought the tower in front of her store to open with her husband Toni Balam, in July 1988, the Sant Pau restaurant in Sant Pol de Mar (Catalonia), in three years she got her first star from the Michelin Guide, in 1996 she won the second and in 2006 the third. In 2004 he opened a restaurant of Catalan cuisine in Tokyo, also called Sant Pau. She is currently the only woman in the world who owns seven Michelin Guide stars, three for her restaurant Sant Pau in Sant Pol de Mar (Barcelona), two for Moments, in Barcelona at the head of whose kitchens is her son Raül Balham and two more for the Sant Pau restaurant in Tokyo.

In Spain she is the chef with the most stars in the Michelin Guide, and also has the highest rating (three soles) of the Campsa-Repsol Guide. Its cuisine is based on the Catalan cuisine tradition, but always giving a touch of modernity. The fact of opening a restaurant in Japan, and his consequent trips to the country, has made him interested in some culinary techniques of that country, adapting them to Catalan cuisine and products. He worries that his kitchen is healthy, so he focuses on the seasonal products of his land, adding “some poetry” to what he cooks. He often mixes literary references in his culinary creations. In 2001 Pere Vilà composed a sardana called Carme Ruscalleda and dedicated to this cook. It is the first song of the sardana CD to dance Ballem-la, it is interpreted by La Flama cobla.
